Pani puri is India's favorite street food—crispy hollow shells filled with tangy spiced water, potatoes, and chickpeas. This fun, vegetarian snack is a refreshing family activity that everyone enjoys assembling and eating.
Blend mint leaves, cilantro, green chili, cumin powder, tamarind paste, and lemon juice with 1 cup of ice cold water until smooth.
Strain the blended mixture into a large bowl; add chat masala, black salt, salt, remaining ice cold water, and stir thoroughly. Chill the pani (spiced water) in the fridge for at least 45 minutes.
Mash boiled potato and cooked chickpeas together in a bowl. Season with a pinch of salt and chat masala, then mix in red onion and cilantro.
Just before serving, gently crack the top of each puri shell to create an opening. Fill each puri with 1 tbsp of the potato-chickpea mixture.
Pour chilled pani into a small pitcher or bowl. Dip each filled puri into the pani or spoon the spicy water inside and enjoy immediately for maximum crispness.
