Kachori Sabzi is a beloved Indian snack with crispy texture and bold, aromatic spicing. This popular vegetarian treat is a family tea-time favorite and a staple at celebrations and gatherings.
Rinse and soak the yellow moong dal for at least 1 hour, then drain. Coarsely grind and keep aside.
In a mixing bowl, sift the all-purpose flour and 1/2 tsp salt. Add 2 tbsp vegetable oil and rub in with fingertips. Gradually add water to form a firm dough. Cover and let rest for 20 minutes.
Heat 2 tbsp oil in a pan on medium heat. Add cumin seeds, fennel seeds, and asafoetida. When fragrant, add ginger and green chili, sauté for 30 seconds. Add ground dal and sauté on low heat until aromatic and moisture is gone (5–7 minutes). Season with turmeric, chili powder, garam masala, amchur, and 1 tsp salt. Cool completely.
Divide dough and filling into equal portions. Flatten a dough ball, add filling, seal and gently flatten. Repeat for all kachoris.
Heat oil in a deep pan for frying. Maintain medium-low heat (325°F–340°F). Fry kachoris in batches, keeping oil temperature steady for an even, crisp texture, turning occasionally, for 6–8 minutes until golden brown. Drain on a rack.
For sabzi: Heat 2 tbsp oil in a separate pan. Add onions and sauté on medium until soft. Add potatoes and peas; stir-fry for 2 minutes. Add turmeric, chili powder, garam masala, and 1/2 tsp salt. Add 1/2 cup water, simmer uncovered for 8–10 minutes till thick and flavors meld. Stir in chopped cilantro.
Serve hot kachoris with the sabzi. Enjoy immediately for best crispness.
