Plump wontons drenched in Sichuan chili oil and garlic make a fiery, protein-rich appetizer. A fresh family favorite with bold, numbing heat.
In a mixing bowl, combine the ground pork, chopped shrimp, minced ginger, scallions, 1 tbsp soy sauce, Shaoxing wine, sesame oil, white pepper, and salt. Stir in one direction until sticky.
Place a wonton wrapper in your palm, add about 2 teaspoons of filling to the center, and fold into a triangle, sealing the edges with water. Repeat with remaining wrappers and filling.
Bring a large pot of water to a boil over high heat. Gently slide in wontons, stirring to prevent sticking. Reduce heat to medium and cook for 4–5 minutes, until wontons float and wrappers turn translucent.
Meanwhile, in a small bowl, mix Sichuan chili oil, remaining soy sauce, rice vinegar, minced garlic, and sugar to make the sauce.
Using a slotted spoon, transfer cooked wontons to serving bowls. Spoon generous amounts of the chili oil sauce over the wontons and garnish with extra scallions if desired. Serve immediately while hot.
