Peel and dice the potatoes and onions; slice the celery. Cut the catfish fillets into bite-sized chunks and keep chilled until ready to use.
In a large heavy-bottomed pot over medium heat, add 1 tbsp oil, then sauté onions and celery with 1/2 tsp salt for 5 minutes until softened but not browned.
Add potatoes, diced tomatoes (with their juice), remaining salt, black pepper, and paprika to the pot. Pour in 6 cups of water and bring to a gentle boil.
Reduce heat to a low simmer. Cover and cook for 25–30 minutes, stirring occasionally, until potatoes are fork-tender but not falling apart.
Gently stir in the catfish pieces. Simmer uncovered for 10–12 minutes, just until the catfish is opaque and easily flakes. Avoid over-stirring to maintain the fish’s texture.
Taste the stew, adjust seasoning if needed, and finish with hot sauce to your preferred heat level. Serve hot with crackers or cornbread.
