Paneer Paratha is a flaky, stuffed Indian flatbread that's pan-fried to golden perfection with butter or ghee. This hearty vegetarian bread is a satisfying family breakfast or dinner accompaniment.
In a large bowl, combine whole wheat flour, 1/2 tsp salt, yogurt, and gradually add water to form a soft, smooth dough. Knead for 5–7 minutes, then cover and rest for 20 minutes.
In a separate bowl, mix crumbled paneer, remaining salt, ground cumin, garam masala, chopped cilantro, and minced green chili. Taste and adjust seasoning as needed.
Divide both dough and paneer filling into 4 equal portions. Roll each dough ball into a 4-inch circle, place a portion of paneer filling in the center, and gather edges to seal well.
Gently flatten and roll each stuffed ball into a 7-inch disc with even thickness. Dust with flour as needed to prevent sticking.
Heat a skillet or tawa over medium heat. Place one paratha on the hot pan and cook until small golden bubbles appear, about 1-2 minutes; flip and spread 3/4 tbsp butter or ghee around the edges. Cook the other side until golden brown, pressing gently for even cooking. Repeat for all parathas and serve hot.
