Aloo Parwal is a light, nutritious Indian vegetable dish that's naturally low in calories and gentle on digestion. This healthy vegetarian preparation is ideal for weight loss, bariatric diets, and family everyday meals.
Heat 1 tbsp vegetable oil in a non-stick skillet over medium flame. Add cumin seeds and let them splutter for 20 seconds to release aroma.
Add finely chopped onions and sauté on medium-low till translucent, about 3 minutes, stirring often to prevent browning.
Mix in potato cubes and sliced parwal. Stir well. Sprinkle turmeric, coriander, and red chili powders. Sauté for 2 minutes to coat the vegetables evenly with spices.
Add chopped tomatoes and salt. Lower the heat to a simmer, cover with a lid, and cook for 15–18 minutes. Stir once or twice to ensure even cooking and prevent sticking.
Check potatoes and parwal with a fork; they should be tender but not mushy. Garnish with chopped cilantro and serve hot as a light main or side.
