Ligurian sweet focaccia enriched with butter and sugar, lighter than brioche, is a festive treat. This delicate mediterranean bread is a family Easter tradition in Genoa.
Warm the milk to just above room temperature (about 105°F); dissolve the yeast and 2 tbsp sugar in the milk and let proof for 10 minutes until foamy.
In a stand mixer bowl, combine flour, remaining sugar, and salt; mix briefly on low speed. Add eggs one at a time, followed by lemon zest, to incorporate.
Add proofed yeast mixture to the flour, then knead on medium-low for 5–8 minutes, until dough is smooth and elastic.
Gradually add softened butter—one tablespoon at a time—mixing each addition fully before adding more. Knead until dough is silky and clears the bowl sides.
Transfer dough to a greased bowl, cover, and let rise in a warm spot until doubled (about 1.5–2 hours). Deflate gently, reshape, and let rise again for 1 hour.
Shape dough into a flat oval (about 10x8 inches) and transfer to a parchment-lined baking sheet. Let rise, covered, for another 1 hour until puffy.
Brush top with milk, dimple gently with fingertips, and sprinkle additional sugar and lemon zest on top. Bake in preheated 350°F oven for 28–32 minutes, until golden on top. Cool before slicing.
