Rinse the toor dal thoroughly, then combine with water, turmeric, and ginger in a medium pot. Bring to a gentle boil over medium-high heat, then reduce to low and simmer, partially covered, for 40 minutes until soft.
Mash the cooked dal lightly with a ladle or potato masher for a creamy texture. Add diced tomato and green chili, simmer for another 10 minutes for flavors to blend.
In a separate small pan, heat ghee or oil over medium heat. When oil shimmers, add mustard and cumin seeds; let them crackle for 15–30 seconds.
Add curry leaves to the hot oil, stirring for 10 seconds to release their aroma. Immediately pour the seasoned oil (tadka) into the simmering dal.
Stir in salt, jaggery, and lemon juice. Simmer on low for 5 more minutes, adjusting seasoning if necessary. Serve hot with rice or flatbread.
