Slice pork loin into thin julienne strips, about the thickness of matchsticks, for fast and even stir-frying.
In a bowl, toss the pork strips with cornstarch, Shaoxing wine, and white pepper; let marinate for at least 10 minutes to ensure tenderness.
Prep scallions and cucumber: cut into thin long strips for wrapping. Set out tofu skin or washed lettuce leaves for assembly.
Heat vegetable oil in a large wok over medium-high until shimmering. Add pork and stir-fry briskly, breaking up any clumps, until the color just turns, about 2 minutes.
