Pat pork chops dry and season both sides with salt, black pepper, garlic powder, and paprika.
Dredge each pork chop lightly in all-purpose flour, shaking off any excess.
Heat canola oil and 1 tablespoon butter in a large skillet over medium-high heat. Sear pork chops for 3-4 minutes per side until golden brown, then transfer to a plate.
Lower heat to medium. Add remaining butter and sliced onions to the skillet. Sauté onions, stirring often, for 8-10 minutes until golden and soft.

Return seared pork chops and juices to the skillet, nestling them in the onion gravy. Reduce heat to low, cover, and cook for 25-30 minutes, flipping chops once halfway, until tender.
Remove lid and let sauce thicken for another 2-3 minutes if needed. Finish with fresh thyme leaves before serving.
