Whisk the egg whites with salt and black pepper until frothy.
Heat half the olive oil in a nonstick skillet over medium flame; pour in the egg whites and cook until just set (about 2–3 minutes).
Remove cooked egg whites and wipe skillet, then add remaining olive oil and toast one tortilla on the pan over medium-high heat until lightly crisp on one side.
Layer cooked egg whites, baby spinach, and cheddar cheese onto the crisped side of the tortilla; top with the second tortilla.
Cook quesadilla for 2–3 minutes per side, pressing gently, until golden and cheese is melted; slice and serve immediately.
