Potato chunks are braised in a savory soy sauce until tender and deeply flavored. This vegetarian, family-friendly comfort dish is hearty, budget-friendly, and endlessly satisfying.
Peel the potatoes and cut them into large chunks, about 1.5 inches wide. Slice the onion and carrot into bite-sized pieces.
In a large skillet or heavy saucepan, heat the vegetable oil over medium heat. Add onion and carrot and cook for 2–3 minutes until just tender and fragrant.
Add the potato chunks and garlic. Stir and cook for another 2–3 minutes to coat the potatoes evenly and develop slight browning on the edges.
Pour in the water, soy sauce, and sugar. Stir gently, increase the heat to bring to a boil, then reduce to a gentle simmer. Cover and braise for 18–20 minutes, stirring occasionally and checking for even cooking.
Once the potatoes are fork-tender and most of the liquid has reduced to a glossy sauce, remove the lid. Drizzle with sesame oil and sprinkle black pepper. Stir gently and simmer uncovered for 2–3 minutes for maximum flavor absorption, then serve hot.
