Remove the tough outer leaves from the cabbage and slice into 1-inch shreds.
Chop the onion finely; set aside. If using smoked turkey, cut into bite-size pieces.
Heat a large heavy skillet or Dutch oven over medium heat; melt the butter completely.
Add onion and smoked turkey (if using); sauté for 6-8 minutes until onions are translucent and turkey is fragrant.
Add cabbage, salt, black pepper, garlic powder, and paprika. Toss well. Reduce heat to low, cover, and cook for 35-45 minutes, stirring occasionally, until cabbage is tender and sweet. Remove lid and cook uncovered for another 5 minutes to evaporate excess moisture.
