Rice cooked with roasted poblano chile purée, corn, and crema for a rich, green-tinged side. This vegetarian, creamy family dish brings smoky poblano flavor to the rice course.
Roast poblano peppers directly over an open flame or under the broiler, turning until skins are evenly charred, then place in a bowl and cover for 10 minutes to steam.
Peel and discard the charred skins and seeds from the poblanos, then blend the cleaned poblanos with crema, half the corn, and garlic until completely smooth.
In a large heavy saucepan, heat olive oil over medium heat. Add chopped onion and sauté until translucent, about 3 minutes, then add rice and toast, stirring frequently, until slightly golden.
Pour in the blended poblano mixture and cook while stirring for 2 minutes until thickened and aromatic. Add remaining corn, vegetable broth, salt, and black pepper.
Bring to a boil, reduce heat to low, cover, and simmer gently for 18–22 minutes until rice is tender and liquid is absorbed. Remove from heat, fluff with a fork, and let rest covered for 5 minutes before serving.
