Slow-braised Passover brisket with savory gravy is a high protein, family tradition for the holiday Seder table. This tender, flavorful cut is the centerpiece of Jewish-American celebration.
Preheat the oven to 325°F. Pat brisket dry and season both sides with kosher salt and black pepper.
Heat olive oil in a large roasting pan over medium-high heat. Sear brisket on both sides until deeply browned, about 4 minutes per side. Remove and set aside.
Add onions, carrots, celery, and garlic to the pan. Sauté over medium heat for 6–8 minutes, stirring and scraping browned bits, until vegetables begin to soften.
Stir in tomato paste and cook for 1 minute. Pour in beef broth and add bay leaves, mixing well.
Return brisket to pan, cover tightly with foil, and braise in the oven for 3–3.5 hours, checking once halfway to baste with juices. Remove brisket, let rest, slice, and serve topped with pan gravy and sprinkled parsley.
