Sweet nian gao with rich brown sugar flavor is a traditional festive dessert. A family treat symbolizing prosperity with naturally sweet, chewy texture.
In a saucepan, combine brown sugar with water and heat over medium, stirring until sugar is completely dissolved. Let cool to room temperature.
In a large mixing bowl, sift glutinous rice flour and salt together. Slowly add the cooled sugar water, mixing constantly to avoid lumps, until a smooth batter forms.
Add vegetable oil to the batter and mix thoroughly, ensuring the oil is evenly distributed for a tender result.
Pour the batter into a lightly oiled 8-inch round cake pan. Gently tap the pan several times to release any trapped air bubbles.
Prepare a steamer with boiling water. Place the pan inside, cover with a tight-fitting lid, and steam over medium-high heat for about 80–90 minutes, replenishing water as needed. The nian gao is done when a toothpick inserted in the center comes out mostly clean.
Remove from steamer and let cool completely before unmolding. Slice and serve at room temperature or pan-fry slices until golden for a chewier texture.
