Pat tuna steaks dry and season both sides with kosher salt, black pepper, and dried oregano. Let sit at room temperature for 10 minutes.
Heat 2 tbsp olive oil in a large skillet over medium-high heat. Sear tuna steaks for 2 minutes per side until lightly browned. Remove and set aside.
Lower heat to medium. Add remaining olive oil, finely chopped onion, and sauté until translucent, about 3 minutes.
Add cherry tomatoes, Kalamata olives, and capers. Cook for 5 minutes, gently stirring, until tomatoes soften and flavors meld.
Return tuna steaks to skillet. Spoon sauce over tuna, cover, and cook for 5–7 minutes on low heat until tuna reaches your desired doneness. Sprinkle with fresh parsley before serving.
