Peel and dice the taro root, then steam it for 20–25 minutes over medium-high heat until tender.
Mash the cooked taro thoroughly; mix in half the sugar, vanilla extract, and salt until smooth and creamy.
In a separate bowl, combine sweet rice flour, remaining sugar, and water to create a smooth mochi dough.
Divide the dough into equal pieces, flatten each, and place a spoonful of taro filling in the center. Pinch closed to form smooth balls.
Boil a large pot of water and gently drop the mochi balls in; cook on medium heat for 5–8 minutes until the balls float. Remove, drain, and let cool before serving.
