Season chicken breasts evenly on both sides with kosher salt, black pepper, and smoked paprika.
Place chicken in a saucepan or slow cooker, add BBQ sauce, apple cider vinegar, and brown sugar. Stir gently to coat. If using stove, set heat to medium-low, cover, and simmer for 35–40 minutes until chicken is fully cooked and shreds easily. If using slow cooker, cook on low for 3–4 hours.
