Tunday Kebab is a succulent Indian grilled meat preparation with aromatic spices and a melt-in-your-mouth texture. This high protein dish is perfect for carnivore diets and makes an impressive family appetizer.
In a large mixing bowl, combine ground lamb, grated onion, chickpea flour, egg, and ginger garlic paste until well incorporated.
Add all seasoning ingredients: ground cumin, ground coriander, garam masala, chili powder, salt, black pepper, and chopped cilantro. Mix vigorously until the mixture becomes sticky and cohesive.
Cover the bowl and refrigerate the mixture for at least 30 minutes to marinate, allowing the flavors to blend and the texture to firm up.
With moistened hands, shape the meat mixture into small palm-sized patties, pressing gently for even thickness.
Preheat a non-stick skillet or grill pan over medium heat. Cook the kebabs for 4–5 minutes on each side, turning carefully, until a deep brown crust forms and the inside is fully cooked but still juicy. Rest for 2 minutes off heat before serving.
