1. Preheat your oven to 350°F. Pat the turkey wings dry, then season evenly with salt, pepper, garlic powder, and paprika.
2. Place a large skillet or Dutch oven over medium-high heat; melt 1 tbsp butter and sear turkey wings 2–3 minutes per side until golden brown, working in batches for even browning. Set aside.
3. In the same pan, add remaining butter, onions, and celery. Sauté over medium heat for 5–7 minutes until onions are soft and translucent, scraping up any browned bits.
