Beef and bean taco bake layers seasoned ground beef, refried beans, and cheese for a hearty Tex-Mex family casserole. This protein-rich, budget-friendly dinner is quick to assemble and always a crowd-pleaser.
Preheat oven to 375°F. Lightly oil a 9x13-inch baking dish with olive oil.
Heat a large skillet over medium-high heat. Add olive oil, then sauté diced onion for 2 minutes until translucent. Stir in minced garlic and cook for 1 more minute.
Add ground beef to skillet; cook, breaking up meat, until fully browned (about 6 minutes). Drain excess fat, then mix in taco seasoning, salt, and black pepper. Cook another 2 minutes, stirring.
Layer half the corn tortillas at the bottom of the baking dish. Spread refried beans evenly, followed by black beans, then spoon seasoned beef mixture over the beans.
