Pat the semi-aged Toma cheese dry with a paper towel and cut into two thick slices, about 1 inch each. This prevents splattering and ensures a caramelized, not soggy, crust.
Preheat a heavy cast iron skillet or griddle pan over medium-high heat for 2–3 minutes until hot but not smoking. The high heat is key for quickly searing the cheese.
