Glazed chicken in a sweet-savory teriyaki-style sauce is served over steamed rice with vegetables. This protein-packed family meal is quick, family-friendly, and appeals to all ages.
In a small bowl, whisk together soy sauce, mirin, brown sugar, honey, garlic, ginger, and sesame oil to make the teriyaki sauce base.
Dissolve cornstarch in 2 tbsp water to create a slurry and set aside for later thickening.
Cut chicken thighs into bite-sized pieces. In a large nonstick skillet over medium-high heat, cook chicken until browned and just cooked through, about 7–8 minutes. Remove chicken and set aside.
In the same skillet, add broccoli and carrots. Stir-fry on medium heat with 2 tbsp water until vegetables are crisp-tender, about 4–5 minutes.
Return chicken to the pan. Pour in the teriyaki sauce, stirring well. Once bubbling, stir in cornstarch slurry and cook, stirring constantly, until sauce thickens and coats chicken and vegetables evenly, 2–3 minutes.
Serve cooked rice in bowls, top with the teriyaki chicken and vegetable mixture, and garnish with sliced scallions.
