White beans slow-simmered with pig's feet until the broth is rich and gelatinous. This protein-packed family dish extracts incredible flavor from humble ingredients in the Mexican tradition.
Rinse the white beans thoroughly and soak them in water overnight for best texture.
Place pig's feet in a large pot, cover with water, bring to a rapid boil, then simmer for 10 minutes; discard water to remove impurities.
Add beans, pig's feet, onion, garlic, carrots, and celery to the pot. Fill with enough fresh water to cover, then bring to a boil over medium-high heat.
Reduce heat to low, skim off any foam, add bay leaves and oregano, cover, and let simmer gently for 3–4 hours until beans are creamy and pig's feet are tender.
Season with salt and pepper during the last 30 minutes; adjust for taste, remove bay leaves, and serve hot, making sure some broth accompanies each portion.
