Crack eggs into a large bowl, season with half the salt and white pepper, and beat thoroughly until yolks and whites are fully blended and bubbly.
Cut ripe tomatoes into bite-size wedges. Thinly slice the green onions and set aside.
Heat 1 tbsp vegetable oil in a nonstick skillet over medium-high heat until just shimmering. Pour in the eggs and gently scramble, stirring constantly, until just barely set but still softly creamy (about 60–90 seconds). Remove eggs from pan and set aside.
