Pav Bhaji Bread is a traditional Indian bread with authentic flavors and a satisfying texture. This versatile accompaniment is a family meal essential that pairs perfectly with curries and chutneys.
Warm the milk until just lukewarm (about 100–110°F); stir in sugar and yeast, and let sit for 10 minutes until foamy.
In a large bowl, combine flour, salt, and pav bhaji masala. Mix well to evenly distribute the spice.
Add the milk-yeast mixture and softened butter to the dry ingredients. Mix until a sticky dough forms, then knead by hand or mixer (medium-low) for 10 minutes for a smooth, elastic dough.
Cover the dough and let it rise in a warm place until doubled in size, about 60–90 minutes.
Punch down dough and divide into 8 equal balls. Arrange in a greased 9-inch square pan, leaving little space between them. Cover and let rise again for about 45 minutes.
Preheat oven to 375°F. Brush tops with melted butter for a golden, soft crust.
Bake for 22–25 minutes or until the tops are deep golden brown. Remove from oven and brush again with more melted butter.
Cool in pan for 10 minutes, then transfer to a wire rack. Serve warm with curries or chutneys.
