Delicate and melt-in-your-mouth, Mewa Barfi is a classic Indian mithai crafted with care and tradition. This premium sweet is essential for Diwali gifting, weddings, and family celebrations.
Chop the mixed nuts finely and lightly toast them in a dry skillet over medium-low heat for 2–3 minutes, stirring often. Set aside.
In a heavy-bottomed pan, melt the unsalted butter over medium heat, then add the milk powder. Roast gently for 2–3 minutes until aromatic but not browned.
Pour in whole milk slowly, stirring constantly to prevent lumps, and cook the mixture over medium-low heat, managing the heat to avoid sticking.
Add sugar and continue to cook, stirring constantly as the mixture thickens, for 8–10 minutes. Control the heat so the mixture reduces without burning.
Mix in the toasted nuts, cardamom powder, saffron, and rose water. Stir well and cook for another 3–5 minutes until the mixture leaves the sides of the pan.
Quickly transfer the barfi mixture onto a buttered tray. Spread evenly to about 1/2-inch thickness. Allow it to cool for 30–45 minutes at room temperature.
Once set, cut the Mewa Barfi into squares or diamonds using a sharp knife. Store in an airtight container up to 3 days.
