In a large pot over medium heat, add the low-sodium chicken broth and bring it to a gentle simmer.
Add chicken breast to the simmering broth. Cook gently for 10-12 minutes until just cooked through, then remove and shred finely using two forks.
Add the corn kernels to the simmering broth and cook for 5 minutes. While simmering, in a small bowl mix cornstarch with milk until smooth.
