Creamy broccoli and cheese bake with a golden, bubbly top is a comforting, vegetarian, family-favorite holiday side. This crowd-pleasing casserole makes even veggie skeptics ask for seconds.
Preheat the oven to 375°F. Lightly grease a 2-quart baking dish with 1 tbsp butter for even browning.
Steam the broccoli florets for 3–4 minutes until just tender and bright green. Drain well to prevent excess moisture in the bake.
Melt the remaining butter in a skillet over medium heat. Add onion and garlic; sauté for 2–3 minutes until soft but not browned.
In a large mixing bowl, whisk eggs, milk, cream cheese (softened), salt, black pepper, and paprika until smooth. Stir in the cooked rice.
Fold in sautéed onion/garlic, steamed broccoli, and 1½ cups cheddar cheese. Mix until all ingredients are evenly incorporated.
Transfer mixture to the prepared baking dish. Sprinkle the remaining ½ cup cheddar evenly over the top.
Bake uncovered for 35–40 minutes until the top is golden, cheese is bubbly, and the center is just set (registers 165°F).
Cool for 5–10 minutes before serving to let the bake firm up, ensuring clean slices and maintaining a creamy texture.
