Tender bamboo shoots are braised with pork in a savory soy sauce until richly flavored. This protein-enhanced family dish combines crisp shoots with succulent meat for satisfying depth.
Slice the pork shoulder thinly against the grain for tenderness, and rinse bamboo shoots before slicing them into thick batons.
Heat a large skillet over medium-high heat, add pork slices, and sear until lightly browned and excess fat is rendered, about 3 minutes.
Add ginger slices and scallions to the pork; sauté for 1 minute until aromatic, then stir in bamboo shoots and cook for another 2 minutes.
Pour in Shaoxing wine, soy sauce, dark soy sauce, sugar, and water; bring to a simmer over medium heat. Cover and braise on low heat for 30 minutes, stirring occasionally.
Remove the lid, increase heat to medium-high to reduce the sauce for 5–7 minutes until glossy and coats the shoots and pork. Finish with sesame oil just before serving.
