Pat the chicken breast dry and season both sides with half the salt and all the black pepper.
Preheat a skillet over medium-high heat. Add half the olive oil and sear the chicken breast for 5-6 minutes per side, adjusting heat to avoid burning.
Rest the chicken for 3–5 minutes after cooking to keep it juicy; slice thinly against the grain for tenderness.
Toss mixed greens, halved cherry tomatoes, and sliced cucumber with the remaining olive oil, lemon juice, and the rest of the salt.
Arrange greens mixture on plates and top with sliced chicken breast. Serve immediately.
