Roast a spaghetti squash, scrape out the strands, top with lean meat sauce. It's pasta night without the pasta calories — and honestly, it's pretty good.
Preheat oven to 400°F. Halve the spaghetti squashes lengthwise and scoop out seeds.
Brush cut sides with 1 tbsp olive oil and sprinkle with a pinch of salt. Place cut-side down on a parchment-lined baking sheet.
Roast for 40 minutes, until squash is tender and easily pierced with a fork. Set aside to cool slightly.
While squash roasts, heat remaining 1 tbsp olive oil in a large skillet over medium heat. Sauté onion, carrot, and celery for 5–7 minutes until softened.
Add garlic and cook 1 minute until fragrant. Increase heat to medium-high, add lean ground turkey, breaking up meat, and cook until browned, about 7 minutes.
Stir in crushed tomatoes, dried basil, oregano, salt, and pepper. Bring to a simmer, then reduce heat to low. Cover and simmer for 15 minutes, stirring occasionally.
With a fork, gently scrape the roasted squash to create spaghetti-like strands and divide among plates.
Spoon the hot meat sauce over the squash strands and serve immediately.
