Neapolitan reinforcement salad with cauliflower, olives, capers, and pickled vegetables is a Christmas side. This vegetarian mediterranean salad is healthy, fresh, and a family holiday tradition.
Break the cauliflower into small florets and boil in salted water for 5–6 minutes, until just tender but not soft. Drain well and spread on a tray to cool completely.
Rinse the capers to remove excess salt; if using anchovies, slice them thinly for even distribution.
In a large bowl, combine cooled cauliflower, pickled vegetables, green and black olives, chopped red bell pepper, capers, and anchovy fillets (if used).
In a separate bowl, whisk together extra virgin olive oil and white wine vinegar. Pour the dressing over the salad and toss gently to coat, making sure not to break the cauliflower.
Season with salt and black pepper, then cover and refrigerate for at least 20 minutes to allow flavors to merge. Serve chilled or at cool room temperature.
