Twisted piloncillo sugar candies on sticks are a nostalgic Mexican treat. This family-friendly confection is a sweet, caramelized, traditional candy found at markets and fairs.
Grease a marble slab or large baking sheet with vegetable oil and set aside wooden sticks.
In a medium saucepan, combine piloncillo, water, lime juice, and the cinnamon stick. Heat over medium flame and stir constantly until the piloncillo dissolves completely.
Increase heat to medium-high and cook the syrup, stirring occasionally, until it reaches 250°F (hard-ball stage) on a candy thermometer—about 20–25 minutes. Remove the cinnamon stick as it nears temperature.
Once the mixture thickens and turns a deep caramel color, quickly pour it onto the prepared surface in lines for twisting. Allow it to cool just enough to handle without burning.
With oiled hands, pull and twist the syrup strips around each stick, shaping them into spirals. Let the Charamuscas cool completely until firm and enjoy.
