The meal prep container you see in every gym parking lot. Chicken, brown rice, avocado — it's a cliché because it's the perfect pre workout plate.
Rinse the brown rice under cold water, then combine with 3 cups of water and a pinch of salt in a pot. Bring to a boil, then reduce heat to low, cover, and simmer for 35 minutes until tender.
While rice cooks, pat the chicken breasts dry, then rub evenly with olive oil, salt, black pepper, and garlic powder.
Heat a large nonstick skillet over medium-high heat; once hot, add the seasoned chicken breasts. Sear each side for 2 minutes, then lower heat to medium, cover, and cook for 8–10 minutes until juices run clear, turning once halfway.
Let cooked chicken rest for 5 minutes, then slice across the grain for tenderness.
To assemble: Add 1/3 of the cooked brown rice to each plate or meal container. Top with sliced chicken breast and 1/2 avocado, sliced. Finish with a drizzle of lemon juice over the avocado for brightness just before serving.
