All the sushi flavors without the rolling — salmon, avocado, rice, and soy sauce in a bowl. High protein, easy to pack, always hits the spot.
Rinse the short-grain rice under cold water until the water runs clear; cook 1 cup rice according to package instructions.
While rice is hot, gently fold in 1.5 tbsp rice vinegar, 1 tsp sugar, and 0.25 tsp salt; fluff with a fork and allow to cool to room temperature.
Slice sushi-grade salmon fillet into bite-sized cubes with a sharp knife; store chilled until serving.
Dice the avocado and cucumber, thinly slice the scallions, and cut nori sheets into thin strips using kitchen scissors.
To assemble, layer cooled rice in each bowl, top evenly with salmon, avocado, cucumber, scallion, and nori. Drizzle with 2 tbsp soy sauce, sprinkle 1 tbsp sesame seeds, and add wasabi on the side; serve immediately.
