Sago Kheer is a creamy Indian rice pudding infused with cardamom, saffron, and topped with nuts. This beloved dessert is served at family celebrations, festivals, and religious occasions across India.
Rinse sago thoroughly in cold water, then soak it for 30 minutes ensuring all pearls are hydrated.
In a thick-bottomed pan, heat 1 tablespoon ghee over medium heat. Add the soaked sago and stir gently for 2 minutes.
Pour in the milk and bring to a gentle boil, stirring frequently to prevent sticking. Lower the heat and simmer for 20 minutes, letting sago turn translucent.
Add sugar, cardamom powder, and saffron strands. Stir continuously until the sugar dissolves and kheer thickens, about 10 minutes.
In a separate skillet, heat remaining ghee and lightly roast cashews and almonds until golden. Garnish the kheer with roasted nuts before serving.
