Silky tofu pudding with sweet syrup is a refreshing, protein-rich vegetarian breakfast. A healthy, clean eats family dish with fresh, delicate texture.
Line a fine mesh strainer with cheesecloth and set over a bowl. Place the silken tofu in the strainer and let drain for 10 minutes to remove excess moisture.
In a blender, combine drained tofu, soy milk, cornstarch, vanilla extract, and a pinch of salt. Blend on high until completely smooth, about 45 seconds.
Pour the mixture into a medium saucepan. Set over medium-low heat and whisk constantly to prevent sticking, gently raising the temperature to a low simmer.
Continue to stir for 6–8 minutes, until the mixture thickens to a pudding-like consistency and you see slow bubbles. Do not let it boil rapidly to avoid breaking the texture.
Remove from heat, pour into serving bowls, and let cool at room temperature for 10 minutes, then chill in the refrigerator for at least 30 minutes to set. Drizzle each serving with 1 tbsp maple syrup before enjoying.
