Tuscan-style farro with vegetables and olive oil is an ancient grain mediterranean dish. This vegetarian meal is high in protein and fiber, offering a healthy, fresh family dinner option.
Rinse the farro thoroughly under cold water, then set aside to drain.
Heat 2 tbsp olive oil in a large pot over medium heat. Add chopped onion, celery, carrot, and sauté for 5 minutes until softened.
Stir in minced garlic and diced zucchini; cook for 2 more minutes, maintaining medium heat to avoid browning.
Add the farro and cook for 1 minute, stirring, to toast the grains lightly.
Pour in the vegetable broth, bring to a gentle boil, then reduce to low heat, add salt, pepper, and thyme. Simmer uncovered for 20 minutes, stirring occasionally.
Mix in the rinsed cannellini beans and spinach. Simmer for an additional 5–8 minutes until the farro is tender but slightly chewy and the spinach is wilted.
Turn off the heat. Drizzle remaining 1 tbsp olive oil over the top. Stir well, adjust seasoning if needed, and serve hot.
