Lentil stew enriched with smoky bacon, tomatoes, and Mexican spices. This high protein, fiber-rich family comfort food delivers bold flavor and supports healthy, satisfying meals.
Rinse lentils thoroughly and set aside; dice bacon into bite-sized pieces and finely chop onion, carrots, celery, tomatoes, and garlic.
In a large pot over medium heat, cook bacon until crispy and browned; drain excess fat, leaving about 2 tbsp in the pot for flavor.
Add onion, carrot, celery, and garlic to the pot; sauté for 5–7 minutes, stirring frequently, until vegetables soften and onions begin to turn translucent.
Stir in diced tomatoes, bay leaf, cumin, oregano, and black pepper, cooking for 2–3 minutes to release flavors; raise heat to medium-high and add lentils.
Pour in chicken broth and salt; bring to a boil, then reduce heat to low, cover, and simmer gently for about 1 hour or until lentils are tender, checking occasionally and stirring to prevent sticking.
Once lentils are soft, taste for seasoning and adjust salt as desired; remove bay leaves and serve hot for optimal flavor and texture.
