Heat 1 tbsp oil in a large skillet over medium heat. Add cumin seeds and let them sizzle for 30 seconds until aromatic.
Add chopped onion and sauté over medium-high heat for 3–4 minutes until translucent. Stir in minced ginger, garlic, and green chili and cook for 1 minute, stirring constantly.
Add chopped tomatoes and cook over medium heat for 5–6 minutes until soft and oil begins to separate, stirring occasionally.
Mix in turmeric powder, coriander powder, red chili powder, and salt. Cook for 1 minute to bloom the spices, keeping heat at medium.
Add moong sprouts and water, stir well, and cover. Simmer on low heat for 15 minutes, ensuring the lentils are tender but not mushy.
