Rinse the split yellow lentils thoroughly under cold running water until the water runs clear.
In a medium saucepan, add the rinsed lentils and 3 cups of water. Bring to a boil, then reduce to a gentle simmer, skimming any foam that surfaces.
Add chopped onion, tomato, turmeric powder, and salt. Simmer uncovered for 25–30 minutes, stirring occasionally for even cooking. Adjust the heat as needed to prevent overboiling.
In a separate small skillet, heat the ghee over medium-high heat. Add cumin seeds and sauté for 30 seconds until aromatic, then immediately add finely sliced garlic. Stir-fry until golden brown, being careful not to burn the garlic.
Pour the hot garlic tempering over the cooked dal. Add red chili powder and coriander powder, stir well, and simmer for another 2–3 minutes to blend flavors. Garnish with fresh cilantro before serving.
