Leftover pasta transformed into a golden, crispy frittata is Neapolitan resourcefulness at its finest. This protein-rich mediterranean dish is a family picnic staple and clever way to reduce food waste.
In a large mixing bowl, lightly beat the eggs, then stir in salt, black pepper, Parmesan, and mozzarella until evenly combined.
Add the cooked spaghetti to the egg mixture and toss gently to coat every strand, making sure pasta is well distributed.
Heat the olive oil in a 10-inch nonstick skillet over medium heat. When the oil shimmers, swirl to cover the base.
Pour the egg-pasta mixture into the skillet. Use a spatula to spread it evenly, pressing gently to create a level surface. Cook uncovered for 7–9 minutes until the bottom is golden and set, adjusting heat to prevent burning.
Slide a spatula around the edges, then invert the frittata onto a large plate. Slide back into the pan (cooked side up) and cook another 5–7 minutes until both sides are crisp and eggs are set through.
Transfer to a cutting board and let rest 5 minutes before slicing into wedges. Serve warm or at room temperature.
