Banana Sheera is a rich, aromatic Indian dessert slow-cooked with ghee, sugar, and cardamom until luscious. This beloved sweet is a family tradition for festivals, celebrations, and special occasions.
Heat 2 tbsp of ghee in a heavy-bottomed pan over medium heat. Add the cashews and raisins; sauté until the cashews turn golden and raisins puff up. Remove and set aside.
In the same pan, add the remaining 2 tbsp of ghee and rava (semolina). Toast rava on medium-low heat, stirring constantly for 6–8 minutes, until aromatic and lightly golden.
Slowly pour in the milk while stirring to prevent lumps. Continue cooking on medium heat until the mixture thickens and begins to leave the sides, about 5–7 minutes.
Add the sliced bananas to the pan. Mix well and let simmer for 3 minutes, gently mashing the bananas as they soften.
Stir in sugar, cardamom powder, salt, and the sautéed nuts and raisins. Cook on low heat for 5 more minutes, stirring often until the sheera turns glossy and homogeneous. Serve warm.
