Cut the corn tortillas into 1/2-inch strips; set aside.
Heat 2 tbsp vegetable oil in a large nonstick skillet over medium-high heat. Once hot, add tortilla strips and fry, stirring, until golden and crisp (about 3-4 minutes). Remove and set aside, leaving excess oil in the pan.
