Rinse and soak kidney beans overnight to ensure even and soft cooking.
In a heavy-bottomed pot, heat vegetable oil over medium heat; add cumin seeds and allow them to sizzle for 30 seconds until fragrant.
Add chopped onions, sauté on medium-high heat until they turn golden brown for deeper flavor development.
Stir in minced garlic and ginger, cook for 1 minute, then add chopped tomatoes and cook until the mixture softens and oil begins to separate.
Add turmeric, coriander, red chili powder, salt, and half of the garam masala; cook the spice mixture for 2 minutes to bloom flavors.
Drain the soaked beans, add them to the pot with 3 cups of water. Bring to a boil, reduce to a gentle simmer, cover, and cook for 50–60 minutes until beans are completely tender, stirring occasionally.
Mash a portion of the beans gently with the back of a spoon to thicken the gravy, simmer uncovered for 10 more minutes for desired consistency.
Stir in the remaining garam masala, adjust seasoning and salt, simmer for 2 more minutes. Garnish with cilantro and serve hot.
