Bring a large pot of water to a gentle boil. Dip octopus in and out 2–3 times to curl tentacles, then fully submerge. Lower to a simmer and cook for 45 minutes until tender but not mushy.
Remove octopus, cool slightly, then peel off any excess skin. Pat dry completely with paper towels to prevent excess moisture.
Transfer the octopus to a plastic wrap or parchment-lined surface. Roll tightly into a log, compressing to expel air for even slicing. Secure ends, wrap again in foil, and chill under weight in the refrigerator for at least 1 hour.
Once firm, unwrap and thinly slice the octopus with a very sharp knife. Arrange slices in overlapping circles on a chilled platter for best texture.
Finish with drizzled extra virgin olive oil, a sprinkle of sea salt and black pepper, fresh lemon zest, and chopped parsley. Serve immediately, chilled, for optimal flavor.
