Pig's feet slowly braised until gelatinous and tender, served in a vinegar-chile escabeche or salsa. A traditional Mexican delicacy rich in collagen and protein, prized at family celebrations.
Place pig's feet in a large stockpot and cover with water. Bring to a vigorous boil over high heat for 10 minutes. Drain, rinse well, and return feet to a clean pot.
Add onion, bay leaves, black peppercorns, garlic cloves, and carrots. Add enough fresh water to cover everything by 2 inches. Bring to a gentle simmer, then reduce heat to low. Skim foam as needed and cook uncovered for 3 hours until the pig's feet are tender and gelatinous.
Meanwhile, soak guajillo chiles in hot water for 15 minutes until softened. Blend chiles with apple cider vinegar, 1 clove of cooked garlic from the pot, a pinch of salt, and a bit of cooking broth until smooth.
Remove pig's feet from the broth and let cool slightly. Cut into manageable pieces. Arrange in a deep serving dish with carrots and some of the cooked onions.
Pour vinegar-chile sauce over the pig's feet, add an extra bay leaf, and chill for at least 1 hour for flavors to meld. Serve cold or at room temperature as a tangy escabeche.
