Dal Palak is a nourishing Indian lentil dish cooked with aromatic spices and a flavorful tempering. This high protein vegetarian staple is DASH-friendly, budget-conscious, and perfect for healthy family meals.
Rinse the yellow split lentils thoroughly and soak for 15 minutes for even cooking.
Add lentils, turmeric, and 3 cups water to a saucepan. Bring to a boil, then simmer over medium-low heat for 20–25 minutes, skimming off any foam.
While lentils cook, heat 1 tbsp oil in a skillet over medium heat. Add cumin and mustard seeds; sauté until they begin to splutter.
Immediately add finely chopped onion, ginger, and garlic. Sauté on medium-high until onions turn golden brown, stirring frequently.
Stir in chopped tomato and cook until soft. Add red chili powder, garam masala, and salt; cook for 2 minutes until spices are fragrant.
Add chopped spinach to the pan; cook on medium for 3–4 minutes until wilted but still bright green.
Combine sautéed mixture with the cooked dal. Add 0.5 tbsp oil if desired, and simmer together for 5 minutes to blend flavors. Adjust consistency with a little hot water if the dal is too thick.
Finish with a gentle stir, taste for salt, and serve hot.
